Gouda is one of the oldest of European cheeses, dating to 12th century Holland. It consists of a smooth, sliceable semi-soft body and is typically made into eight to ten pound wheels. We make our goat Gouda (called Birkie Dusker) in smaller wheels (one and two pounders) and age it in our underground cave for 3 months. It is perfect for snacking or cooking.
