Well, you know goats’ milk cheese has entered the mainstream if recipes are appearing in children’s magazines! And reliable word has it that kids love the following — as Jamie Oliver says, kids can learn to LOVE healthy food and it can change their lives!
2-cups seashell-shaped pasta, cooked, drained, and kept warm
1-can (15 oz) corn
1-can (15 oz) chickpeas (aka garbanzo beans)
1-cup frozen peas
some cherry tomatoes, halved
4-oz goat cheese, crumbled
1/4-cup olive oil
2-tbsp red vinegar
salt and pepper
Mix all ingredients until the cheese has melted. Can be served warm or cold.
