Well, we are quite the proud cheesemakers. After our first full year, we are now packaging up the last wheels of the season as the aging cave has to be thoroughly cleaned before the next season begins….and the final cheeses are quite magnificent. Wish we could share the smells and tastes with you. They are worthy of savoring. The gouda is creamy, the raclette is buttery and melty, and the gruyere is very surprisingly good, especially given that the first make was not really what we’d expected or hoped for. These latest and last beauties are everything we hoped for!
All of these lovelies are going to good homes, where they will be munched upon with suitable beverages, crackers, palate cleansers and breads. We can’t wait to get to the next batch as soon as the 2011 milk arrives!
