My fave recipes from that website are too numerous to list here, but this one is easy-peasy and just right for this weekend, when most of the US is housebound. You can make it with cow’s milk or goat’s milk cheese, but do try it. Comfort food squared.
* 1 loaf French Bread
* 8 slices Fresh Mozzarella Cheese
* 1 cup shredded Goat Gouda, Raclette or Asiago Cheese
* 2 cups garlic tomato sauce
* red pepper flakes
Cut bread in half lengthwise. Spread tomato sauce on insides of both halves. Top both open-faced halves with 4 slices of Fresh Mozzarella each. Top with 1/2 cup of shredded cheese each. Sprinkle with red pepper flakes if desired. Bake in 375 degree oven for 5 minutes. Turn oven up to broil for 1 minute. Take out of oven. Sprinkle with chopped parsley.
