Curried Couscous with Goat Cheese

I know this looks like granola with goat cheese, but it’s not! It can be either a meatless entree or side dish, with a pleasing savory-sweet combination, and it comes together in 15 min. Gotta love that!

A hint of curry in this chilled couscous salad is balanced by sweet dried fruit and creamy goat cheese.
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Yield: 4 servings
Ingredients:
  • 1 cup water
  • 1 cup dried couscous
  • 1/4 cup roughly chopped parsley
  • 1/3 cup dried blueberries, or more to taste
  • 1/3 cup slivered almonds
  • 1 teaspoon curry powder
  • 2 tablespoons walnut oil
  • 1/3 cup crumbled goat cheese (add more if you like it creamier)
Preparation:

Bring the water to a boil. Add couscous, turn off heat, and put a lid on the pot. Let sit for five minutes.

Use a fork to fluff the couscous. Stir in parsley, blueberries, almonds, curry powder, walnut oil and cheese. Salt to taste. Serve at room temperature.
